A “Vegan Burrito” is a great option for days you are looking for a light, healthy and easy meal. They are nutritious, filling, and very easy to make. It is versatile, taste absolutely delicious and can be made with veggies of your choice.
It is great for lunch, dinner, on the go lunch, or for weekend brunch.
Vegan burritos are stuffed with beans, corn, rice, veggies and guacamole. You can have it with vegan queso, which gives you a cheesy flavour. We will also tell you the recipe of vegan queso in the same post.
Once you try it, you’ll also be making it on repeat every day… 😊
Here’s what you’ll need to make this VEGAN BURRITO recipe:
Ingredients
- 1 medium chopped red onion,
- 1 chopped red bell pepper
- 3 cloves garlic (minced)
- 1 ½ cup black beans, drained and rinsed
- 1 ½ cups uncooked brown rice/ white rice
- ½ cup corn
- 4 chopped sundried tomatoes
- water
- 2 tsp olive oil
- 1 tbsp Lime juice
- Dried oregano
- Freshly ground black pepper
- Crushed red pepper flakes
- 1 tsp ground cumin
- 2 tsp chili powder
- 1 tsp smoked paprika
- 1 tsp salt, or more to taste
For guacamole: 2 chopped avocado, ¼ cup red onion (finely chopped), ¼ cup fresh cilantro, zest or juice of 2 limes, ground cumin, salt and pepper to taste
For serving:
- 8 burrito sized flour tortillas
- 2-3 cups chopped lettuce/ spinach
- vegan cheese shreds
- chopped cilantro, diced tomatoes, chopped green onions, jalapeno slices
- hot sauce
Method:
Prepare beans and corn:
- Boiled the beans.
- Boiled the corn.
- In a pot, add the olive oil and warm it. Add the chopped onion, half of the minced garlic and sauté, stirring constantly.
- Now add the boiled beans, boiled corns, chili powder, lime juice, dried oregano, ground black pepper, crushed red pepper flakes, smoked paprika, ground cumin and salt.
- Set aside to marinate.
Make the red bell peppers:
- Heat the olive oil in a large pan over medium heat. Add remaining minced garlic and sauté for 20 seconds.
- Add the red bell peppers, a pinch of salt, and ground black pepper. Cook until the peppers are soft and browned in places. Remove from the heat and season to taste.
Make the Rice:
- Cooked the rice (boil in water).
- Add the cooked rice to a bowl and then add in the chopped sundried tomatoes and lime juice and toss until well mixed in. Add sea salt and black pepper to taste. Set aside.
Prepare the guacamole:
- Peel and pit the avocados in a bowl.
- Add in the red onion (finely chopped), fresh cilantro, lime juice, ground cumin, salt and pepper to taste.
- Use a fork or potato masher to mash the guacamole together.
Assemble the burritos:
- Lay out the tortillas and fill the centres with a layer of lettuce/spinach, a scoop of prepared rice, add prepared beans, the peppers, guacamole, chopped green onions, diced tomatoes, chopped cilantro, and jalapeno slices.
- Add whatever additional toppings you would like such as hot sauce, vegan sour cream, vegan cheese shreds.
- Tuck and roll closed. Serve with vegan queso.
- Enjoy!
**To freeze the left-over, you have to simply roll burritos with only the mixture and no additional toppings. And wrap each burrito in foil, then place them in a freezer safe bag.
Reheat in the microwave for about 2 minutes until warm.
VEGAN QUESO
Vegan queso is made up of simple ingredients which are easily available.
To make this cheesy sauce all you need to have
Ingredients:
- 1 cup Raw cashews (soaked and drained)
- 1 tsp Lemon juice
- 2 tbsp Nutritional yeast
- Canned tomatoes
- 1 Green chilies
- Salt to taste
How to prepare:
- Add soaked and drained cashews, water, lemon juice, salt, and nutritional yeast.
- Mix all with high powered blender.
- Drain the juice from the tomatoes and green chiles over a small bowl. And add the saved liquid to the blender (keep the tomatoes and green chiles on the side for further use).
- Blend on high for a few minutes until you get very smooth mixture.
- Add this mixture, the tomatoes and green chiles to a pot.
- Stir well and warm gently over low-medium heat.
- Stir frequently (not burn the queso).
- The mixture will thicken slightly.
You can make variations in vegan queso by adding clove, smoked paprika or other seasoning.
Serve while warm with Vegan Burrito and enjoy!
