sandwich, loaded with lots of fresh ingredients, is sure to hit the spot!
Who knew veggies could be so exciting?
A healthy, hearty, delicious sandwich…yummy! It is a great way to eat lots of vegetables at once. You
can pack as many veggies as humanly possible into the sandwich.
Veggie Hummus Sandwich is piled high with crunchy vegetables, creamy hummus, and layers of
colourful, healthy, deliciousness!
This vegan hummus sandwich is super healthy and easily customizable as all of the ingredients are
completely optional and interchangeable. These sandwiches are also great for on-the-go lunches to
take to work, school, or picnics.
To make appetizing veggie hummus sandwiches for two people, all you need
Ingredients:
- 4 slices of whole grain bread
- 1/3 cup hummus or can try a flavoured hummus of your choice. (Recipe mentioned in the
same section)
- Veggies: spinach, lettuce, cucumber slices, tomato slices, handful sliced onion, grated
carrots, bell peppers, bean sprouts, black olives and so much more of your choices. (veggies
are optional; you can customize it as per your choice and taste)
- Seasonings: salt, pepper, oregano, basil or spices
To prepare Veggie Hummus Sandwich:
- Toast bread (optional); otherwise, spread hummus over bread slices.
- Divide sandwich ingredients (veggies of your choice) over two of the slices
- Season with salt, pepper, oregano, or any other desired spices.
Top with remaining slices. Serve immediately.
Prepare hearty homemade Hummus with the following recipe.
Ingredients:
- Tahini (crushed sesame seeds)
- Extra Virgin olive oil
- Boiled chickpeas (also called garbanzo beans)
- Fresh lemon juice
- Garlic clove
- Ground cumin
- Salt to taste
- Paprika to taste
Homemade hummus method:
- In a food processor, add boiled chickpeas, 2 tbsp liquid from chickpeas, tahini, lemon juice,
olive oil, garlic, cumin, and salt to taste.
- Process the mixture. Add additional liquid from chickpeas to thin as needed.
- Sprinkle with paprika. Store in refrigerator.
Note: The dip thickens up once chilled, thin with more liquid as desired.
This healthy homemade hummus is one of the best protein snacks. It’s the perfect dip for all your
favourite fresh veggies, a delicious spread on sandwiches or wraps, and a great addition to different
bowls.
